To honour generations of olive-growing tradition, our olives are handled with precision from the moment they are harvested. They are washed and cold pressed immediately after picking.
This first extraction takes place at low temperatures to protect the oil’s natural structure, aroma, and nutritional integrity.
By gently pressing once, we preserve what matters most: freshness, clarity, and the olives’ purest expression.
